i’m excited to share that my entry to the @searchlightnfts @joynxyz open call was selected as a finalist—i’m thrilled to be featured alongside the blue-tiful work of many talented artists. thank you to the SearchLight curators!

i’m a lifelong creative and digital pioneer, but this world of digital art and nfts is new so i just dove right in to learn and connect with others.

for me, this piece captures that moment when you come out of the blue feeling stronger and more connected to your inner light ✨

MAKE THIS 👉 salted caramel & butterscotch zucch MAKE THIS 👉 salted caramel & butterscotch zucchini cake 👇 

INGREDIENTS (see notes for subs)

▢ 1 c @octonutsca Salted Caramel Cashew Butter (essential ingredient, imo 🙌🏻)
▢  1/4 c Octonuts Vanilla Almond Protein Powder¹
▢  1 egg
▢  1/3 c scotch (or whiskey)²
▢  1 tsp baking soda
▢  1 tsp vanilla bean paste or vanilla extract
▢  1/4 tsp salt
▢  1 1/2 c shredded zucchini, tightly packed (~2 small)
▢  1 c butterscotch flavored chips³

STEPS

✦ Preheat oven to 350 degrees.
✦ Prepare a cake pan. I use a 9” springform pan, lining the bottom with parchment and spraying the sides with cooking spray — makes it easy to remove the cake. A regular 8” or 9” square / round pan, prepped with parchment and / or cooking spray, also works.
✦ Combine cashew butter, almond  powder, egg, scotch, salt, baking soda, and vanilla; mix until smooth with no lumps.
✦ Add shredded zucchini and butterscotch chips; mix until evenly combined. 
✦ Pour batter into prepared pan.
✦ Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. If using an 8” pan, cook 40-50 minutes.

Notes:

1️⃣ You can substitute regular almond flour or try another grain-free flour, like cassava.
2️⃣ I’ve also made this with water instead of scotch, but all my taste testers preferred this version. 🥃
3️⃣ For a lower sugar option, try @lilys_sweets Sweets Butterscotch Flavor Baking Chips — sweetened with erythritol and stevia. I’m generally not a fan of artificially sweetened products, but these are not bad.

Recipe adapted from @pamelasalzman’s AMAZING Grain-Free Chocolate Zucchini Cake. You must try this cake — it’s been a hit with everyone, whether or not they have dietary restrictions.
