MAKE THIS 👉 salted caramel & butterscotch zucch MAKE THIS 👉 salted caramel & butterscotch zucchini cake 👇 INGREDIENTS (see notes for subs) ▢ 1 c @octonutsca Salted Caramel Cashew Butter (essential ingredient, imo 🙌🏻) ▢ 1/4 c Octonuts Vanilla Almond Protein Powder¹ ▢ 1 egg ▢ 1/3 c scotch (or whiskey)² ▢ 1 tsp baking soda ▢ 1 tsp vanilla bean paste or vanilla extract ▢ 1/4 tsp salt ▢ 1 1/2 c shredded zucchini, tightly packed (~2 small) ▢ 1 c butterscotch flavored chips³ STEPS ✦ Preheat oven to 350 degrees. ✦ Prepare a cake pan. I use a 9” springform pan, lining the bottom with parchment and spraying the sides with cooking spray — makes it easy to remove the cake. A regular 8” or 9” square / round pan, prepped with parchment and / or cooking spray, also works. ✦ Combine cashew butter, almond powder, egg, scotch, salt, baking soda, and vanilla; mix until smooth with no lumps. ✦ Add shredded zucchini and butterscotch chips; mix until evenly combined. ✦ Pour batter into prepared pan. ✦ Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. If using an 8” pan, cook 40-50 minutes. Notes: 1️⃣ You can substitute regular almond flour or try another grain-free flour, like cassava. 2️⃣ I’ve also made this with water instead of scotch, but all my taste testers preferred this version. 🥃 3️⃣ For a lower sugar option, try @lilys_sweets Sweets Butterscotch Flavor Baking Chips — sweetened with erythritol and stevia. I’m generally not a fan of artificially sweetened products, but these are not bad. Recipe adapted from @pamelasalzman’s AMAZING Grain-Free Chocolate Zucchini Cake. 𝐉𝐮𝐱𝐭𝐚𝐩𝐨𝐬𝐢𝐭𝐢𝐨𝐧 → The reality is, we’re all aging — much better than the alternative, right?!? Y’all know I’m exploring how generative AI treats age (among other things). No surprise — our media and cultural bias toward a young, supermodel standard of beauty is the default, and you’ll see many AI artists rehashing that norm. I ponder… when you can imagine nearly ANYTHING with generative AI, why replicate the status quo?!? The rebel in me likes to challenge default thinking, which led me to create this 𝐉𝐮𝐱𝐭𝐚𝐩𝐨𝐬𝐢𝐭𝐢𝐨𝐧 series of moving portraits where I imagined an older woman recreating a portrait from her youth. The intent is to show that, when viewed through the lens of time, age has an affect on our appearance. Still, our ageless core is steadfast. I used Midjourney to collaboratively ideate and capture design requirements in real-time with a beloved client. From there, I customized the SOOAI design using a combo of Photoshop and Midjourney.
